Botanical Tonic Water

The aromatic tonic water is elaborately produced in Puerto de Santa Maria. The production is similar to the gin production. At Indi, too, the botanicals are first soaked in alcohol. After that, the solution goes into glass tanks, where it rests for about two months. Then it's on to the distilling, but gently please - that's what Indi attaches great importance to. The subsequent blending with cane sugar, water and fruit juice means that no alcohol remains in the end product.
